Under the heading of unimportant, I mentioned in an earlier post that I got a kitchen range with an induction cooktop. I have been asked by at least one person how I liked it, so I’m going to bore you all.
I love it.
Boiling water is like a parlor trick. I measured 4-1/2 cups of water for a recipe, and it boiled in just over a minute. Stuff comes up to heat faster than any gas stove I’ve had, and it cools faster than turning off a flame
It’s freaking magic.
It does require adjustment, because you know, it gets hot faster and gets cool faster. Mise en place is not a nicety, it’s a demand. But the cooktop doesn’t really get hot so it’s easy to clean.
And, I can boil water in no time—did I say that?
I had to get rid of two pots that don’t work with induction but they weren’t great, so that’s not a negative. But there is one—a Swiss Diamond no-stick pan—that’s killing me.
But I’ll get over it.
We have one, Susan loves it, that all that matters, Thank you…….
If she loves it, it’s golden. That woman can cook!

Hi Lola, here’s the thing–I cooked on gas my entire cooking life, adjusted to electric, and…this is better than gas. Not a little, a lot.
I thought about asking you too. Glad to hear you treated yourself to a special gift and it’s giving you well-deserved pleasure.
But first, I couldn’t decide between two other comments, so here are both:

An induction cooktop, eh. I’ve never heard of it. I must be back in the twentieth century. Is it like a new stove or is it like a micro-wave/induction combo? We look at air fryers. I’m sure after you buy one, you wonder how-in-the-world did I ever live without a way to reheat french fries or toast toast? And we simply don’t have room on our counter top for a small blimp. But it sounds like what you’ve purchased is extremely practical for the cook.
Ha! I looked at these new electric kitchen possibilities at an exhibit at the Architectural Society and began dreaming. Your excitement about your Induction cooktop makes it more of a reality in my kitchen. Thanks.
I’m sorry about the loss of your Swiss Diamond Non-Stick pan. I don’t know much about the Swiss. But, their flag is a big plus. Xoxo
